Cooking With Michael – Zucchini Marinara
My January weight loss plans have me digging around for healthy recipe ideas. So the other night my friend Jonathan and I came up with this “healthy green marinara sauce”. It’s packed with a lot of low calorie density zucchini and filled with flavor.

You can have this ready in about 20 to 25 minutes.
- 1 tbsp olive oil
- 1/2 onion, chopped
- 3 clove a garlic, minced2 medium Zucchini, sliced in half longwise and then chopped
- 1 teaspoon each of celery seed and fennel
- 1 can 28 ounce whole peeled San Marzano style tomatoes, pureed in the blender
- 1 handful of parsley, chopped
- 1 tablespoon lemon zest
In a saucepan heat up the olive oil on medium and saute the onions and garlic, stirring constantly until the onions are translucent (about 2 to 3 minutes). Toss in the zucchini, celery seed, and fennel, and continue to saute.
After a few minutes add in the tomatoes, parsley, and lemon zest. Combine ingredients with a wooden spoon and le cook for 10 to 15 more minutes.
Serve with pasta, or as a sauce for chicken or fish.
